Tori ka Salan

Ingredients:
Oil 1/2 cup
Onion (sliced) 1 cup
Ginger garlic (chopped) 2 tbsp
Cumin seeds 1 tbsp
Green chilies (sliced) 2-3
Tomatoes (chopped) 1 cup
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Salt 1 tsp
Coriander powder 1 tbsp
Ridge gourd(sliced) 3 cups
Water 1 cup
Hot water 1 cup
Ginger (julienne) as required
Green chilies (sliced) as required

Directions:
In a pan heat the oil and add cumin seeds and sizzle for a few seconds. Add onion and cook until translucent. Add ginger garlic and cook for a few seconds.
Add tomatoes and cook until tomatoes get soft.
Now add red chili powder, turmeric powder, coriander powder and salt. Add water and simmer for a few seconds. Add green chilies and give it a good mix.
Add ridge gourd, hot water and cook over high flame for 1-2 mins.
Now cover and cook for 10-15 mins or until ridge gourd gets soft.
Garnish it with ginger and green chilies. Your Tori ka Salan is ready.
