Easy vegan sausage roll recipe

INGREDIENTS
Vegan Sausage Rolls Recipe - Vegan Snacks

Almond Feta:

2/3 cup whole almonds
2 tablespoons lemon juice
5 teaspoons olive oil
1 garlic clove
1 tablespoon salt
5 tablespoons water

Sausage Roll Meat

1/4 cup flax meal
1/2 cup water
1 diced brown onion
2 tablespoons dried chives
1 cup pecans
Almond feta (from above)
1 tablespoon soy sauce
2 tablespoons maple syrup
1/2 cup breadcrumbs
1 1/2 cups rolled oats
1 tablespoon nutritional yeast

Sausage Rolls:

3 sheets puff pastry
Plant based milk
Sesame seeds

METHOD
Almond Feta:

Soak the whole almonds overnight.

In a food processor, blend all the ingredients until a smooth consistency is achieved.

Sausage Roll Meat:

Create a "flax egg" by mixing the flax meal and water in a small bowl. Allow it to thicken.

In a food processor, blend the onion, dried chives, and pecans until they form a chunky texture.

Add the almond feta, soy sauce, maple syrup, flax mixture, breadcrumbs, oats, and nutritional yeast. Blend until the mixture becomes smooth.

Place the mixture in the fridge for 1-2 hours to allow it to thicken.

Sausage Rolls:

Cut a thawed sheet of puff pastry in half and spread the mixture down the middle.

Roll the pastry and seal it with plant-based milk.

Cut the rolled pastry into your desired sized pieces, brush them with plant-based milk, and sprinkle sesame seeds on top.

Bake at 200C for approximately 20 minutes, or until the rolls turn a golden brown colour.
