This recipe is as enticing as the name itself, do try this spicy and delicious recipe of eggs!

EGG ROAST

Ingredients

4-6 eggs, hard boiled
4 medium onions
2 tbsps coconut oil
1½ tsps mustard seeds
20-25 curry leaves
Salt to taste
3 tomatoes, chopped
¼ tsp turmeric powder
2 tsps coriander powder
1 tsp Tata Sampann Chilli Powder
2-3 green chillies
1 tsp chopped fresh coriander leaves
Fresh coriander sprigs for garnish

Method

1. Thinly slice onions.
2. Heat coconut oil in an earthen pot.
3. Add mustard seeds in the hot oil and let them splutter. Add curry leaves and onions and sauté till the onions turn golden brown.
4. Add salt and mix well. Add tomatoes, mix and sauté for 3-4 minutes or till they turn soft and pulpy.
5. Add turmeric powder, coriander powder and Tata Sampann Chilli Powder and mix well. Cook for a minute.
6. Add 1 cup water, mix and cook for 1-2 minutes. Add green chillies, mix and sauté for a few seconds.
7. Adjust salt, mix and cook for 1-2 minutes.
8. Halve the hard boiled eggs and gently slide into the onion-tomato mixture, gently mix and coat with the mixture.
9. Sprinkle remaining curry leaves and coriander leaves, cook for a minute and switch the heat off.
10. Transfer the egg roast into a serving bowl, garnish with coriander sprigs and serve hot.
