Take chickpea water in a large bowl, add vinegar, lemon juice, sugar, sea salt, Dijon mustard, and crushed black peppercorns and beat with an electric hand blender till the mixture is frothy.2. Slowly add the oil in a thin stream while beating the mixture continuously till the mixture turns thick. Store in air tight container and use as required. 3. To make the salad, take chickpeas in a large bowl. Add yellow capsicum, green capsicum, carrot, cucumber, cherry tomatoes, pomegranate, and purple cabbage and 2-3 tbsps of the prepared mayo and gently mix till well combined.
