EGGLESS MAYO WITH CHICKPEA WATER

Ingredients

¼ cup chickpea water ( ½ cup chickpeas, soaked for 6-8 hours, boiled, drained and the water reduced to ¼ cup)
1 cup oil
½ tsp vinegar
A few drops of lemon juice
½ tsp sugar
Sea salt to taste
½ tsp Dijon mustard
Crushed black peppercorns to taste
Salad
1 cup boiled chickpeas
1 small yellow capsicum, cut into triansgle
1 small green capsicum, cut ino triansgles
1 small carrot, sliced
1 small cucumber, sliced
2-3 cherry tomatoes, halved
2 tbsps fresh pomegranate pearls
½ cup shredded purple cabbage

Method

1. Take chickpea water in a large bowl, add vinegar, lemon juice, sugar, sea salt, Dijon mustard, and crushed black peppercorns and beat with an electric hand blender till the mixture is frothy.
2. Slowly add the oil in a thin stream while beating the mixture continuously till the mixture turns thick. Store in air tight container and use as required.
3. To make the salad, take chickpeas in a large bowl. Add yellow capsicum, green capsicum, carrot, cucumber, cherry tomatoes, pomegranate, and purple cabbage and 2-3 tbsps of the prepared mayo and gently mix till well combined. Serve this immediately.
