Learn how to make 'Eggless Tutti Frutti Cookies' at home by following these simple steps by chef Kanak.

These muffins are very light, soft and moist in texture and are egg free. They have perfect sweetness from sugar and banana and if you have a sweet tooth, then this is just the right recipe for you.


Ingredients:

1 cup all purpose flour
2 tbsp custard powder
1/3 cup butter
1/2 cup powdered sugar
1/2 tsp vanilla extract
1/4 tsp cardamom powder
1/2 tsp baking powder
1/4 cup tutti frutti
3 tbsp dry nuts - chopped
1 - 1.5 tbsp milk

Method:

- In a bowl, add the all purpose flour, custard powder, baking powder, cardamom powder, tooti frutti and the dry nuts and mix all the ingredients well and keep aside.
- In another bowl, add the softened butter and sugar and blend them well for about 4-5 minutes until it turns fluffy and creamy. Then add vanilla essence to it and whisk again. Then keep adding the flour mixture to it in batches and mix well to form a crumby dough.
- Slowly start adding the milk to this mixture and use your hands to bring the mixture together.
- Shape the cookie dough into a 11/2 to 2 inches diameter long and place it on a cling film. Wrap the dough with the cling film and tie on both the sides. Keep this in the freezer for about 30 to 40 minutes.
Meanwhile, pre heat the over to 180 degrees Celsius and line the baking tray with butter paper.
- Take the cookie dough out of the refrigerator and cut about 1/4th to 1/2 inches thick cookies.
- Arrange the cookies on the baking tray and space them out.
- Bake them in the pre-heated oven at 170 degrees Celsius for about 10 - 12 minutes.
- Once baked, let the cookies cool down completely before serving or storing.
