Toasted baguette slices served topped with spicy roasted brinjal mixture

EGGPLANT CROSTINI

Ingredients

1 big eggplant (brinjal), roasted and peeled
1 loaf soft baguette (French bread)
65 gms bhuna masala
2 tbsps chopped onion
4 tbsps butter
2 tbsps freshly crushed garlic
Salt to taste
ΒΌ tsp red chilli powder
A few parsley leaves
A few thin strips of green capsicum

Method

1. Slice the baguette thickly and toast them in a hot non-stick tawa.
2. Halve the brinjal vertically and remove seeds. Chop the flesh roughly.
3. Saute bhuna masala and onion for 1 min in a non-stick pan. Add the roasted brinjal and mix well.
4. Mix butter with freshly crushed garlic, salt and red chilli powder well.
5. Remove the bread slices from the tawa, apply the spiced butter generously on them.
6. Top with the brinjal mixture and arrange them on a serving plate.
7. Garnish each slice with a little parsley and a few thin strips of green capsicum and serve immediately.
