Serves 3-4
Recipe in English:

Ingredients:
-Pyaz (Onion) 1 large
-Lehsan (Garlic) cloves 3-4
-Baingan (Eggplant) long 2-3
-Tamatar (Tomatoes) 2 medium
-Hari mirch (Green chillies) 2 large
-Cooking oil 3-4 tbs
-Himalayan pink salt tsp or to taste
-Zeera (Cumin seeds) roasted & crushed tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Kali mirch powder (Black pepper powder) tsp
-Water 3-4 tbs
-Cheese grated 3-4 tbs (Optional)
-Anday (Eggs) 4
-Hara dhania (Fresh coriander) chopped
-Paprika powder

Directions:
-On a clean cutting board,chop onion,garlic & set aside.
-Cut eggplant in small cubes & apply cooking oil or lemon to prevent browning.
-Finely chop tomatoes & set aside.
-Deseed green chillies,chop roughly & set aside.
-On a cast iron skillet,add cooking oil,onion & saut until translucent.
- Add garlic,eggplant,mix well & cook on medium flame for 4-5 minutes.
-Add tomatoes,green chillies & mix well.
-Add pink salt,cumin seeds,red chilli crushed,black pepper powder & mix well.
-Add water & mix well,cover & cook on low flame for 4-5 minutes.
-Add cheese & make 4 gashes with spoon.
-Add eggs one by one in gashes,sprinkle fresh coriander,cover & steam cook on low flame for 4-5 minutes.
-Sprinkle paprika powder & serve!

-Clean cutting board per pyaz aur lehsan ko chop ker lein & side per rakh dein.
-Baingan ko small cubes mein cut ker lein aur cooking oil or lemon juice laga lein.
-Tamatar ko finely chop ker ka side per rakh dein.
-Hari mirchon ko roughly chop ker ka side per rakh dein.
-Cast iron skillet mein cooking oil aur pyaz dal dein aur translucent hunay tak saut ker lein.
-Lehsan aur baingan dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein.
-Tamatar aur hari mirchein dal ker ache tarhan mix karein.
-Pink salt,zeera,lal mirc crushed aur kali mirch powder dal ker ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein.
-Cheese dal dein aur spoon ki madad sa gashes bana lein.
-Ek,ek ker ka anday dal dein,hara dhania dal dein aur dhak ker halki ancch per 4-5 minutes kliya steam cook ker lein.
-Paprika powder dal ker serve karein!
