Tell someone how you really feel with these delicious cream-filled treats shaped like emojis.INGREDIENTS:250 milliliters skim milk1 tablespoon vinegar275 grams Butter, Softened200 grams Sugar1 eggYellow Food Colouring2 teaspoons vanilla450 grams Plain Flour1/4 teaspoon baking sodaPinch of salt250 grams icing sugarEdible Googly eyesEdible markers in black and redSTEPS:1.) First make a buttermilk by combining the vinegar and milk in a small bowl. Stir and then set aside.2.) Preheat oven to 350˚F. Line 2 baking trays with parchment paper. 3.) In a mixing bowl, cream 125 grams of butter and the sugar together until pale and creamy then beat in the egg, yellow food colouring and add 1 teaspoon of vanilla extract.4.) In a separate bowl add the flour, baking soda and salt, mix. 5.)Gradually add spoonfuls of the flour mixture to the butter mixture, mixing well after each addition, along with a few glugs of buttermilk to make a smooth, thick cake mixture. You may not need all the buttermilk.6.) Place batter in a piping bag or large freezer bag and cut a one inch opening in one of the corners. Gently pipe out the batter on to the baking trays to make even mounds roughly 1 1/2 inches in diameter. 7.) Allow room for spreading. Bake in the oven for 12-14 minutes until risen, lightly golden and firm to the touch. Cool for 5 minutes on the trays before transferring to a wire rack to cool completely.8.) Decorate the top side of half of the whoopie pies by drawing emoji faces using the edible markers. Attach the googly eye with a small dab of icing.9.) For the icing, whisk together the remaining softened butter, 1 teaspoon extract and icing sugar until smooth and spreadable. Place in a piping bag with a star tip and carefully pipe onto the flat side of one of the pies.
