Aloo Beans Curry i.e. Potatoes and Beans Masala is made here with a twist of adding corn and some pickled onions. The dish tastes amazing with addition of mustard seeds, tomatoes and curry powder. This kind of simple Indian vegetarian food is enjoyed by Indian people everyday along with lentils and Indian flatbread - Roti.

Ingredients

350 gms chopped green beans
2-3 potatoes
1 Large onion chopped + pickled onions if you've got some
ginger - small piece
1 tbsp garlic
1/2 cup tomato puree
1 tsp curry powder
Salt, chilli powder and Turmeric - 1 tsp each
1 tsp mustard seeds
1/2 tsp cumin seeds
1 cup corn
Cilantro for garnish
Oil for cooking
1/2 cup water

Method:

1. Prepare everything. Wash and chop potatoes, beans, onion, garlic and ginger
2. Heat Oil and fry mustard and cumin seeds
3. Add onion, ginger and garlic. Mix well and add salt, chilli powder and turmeric.
4. After frying for 2-3 mins, add pickled onions
5. Mix well and add potatoes. Let potatoes cook for 5 mins
6. Add beans. Mix well. Cover the pot and let cok for 5-6 mins until beans are tender
7. Add tomatoes. Mix well and let the dish cook further for 5 mins
8. When potatoes are almost done, add curry powder, half cup water and further cook until potatoes are fully done.
9. Garnish with cilantro and serve with Vegan naan.
