Somewhere in the turnip neighborhood, near the intersection of cabbage and broccoli, is kohlrabi. In the kitchen, kohlrabi behaves similarly to root vegetables and can be eaten raw or cooked. Kohlrabis fresh texture and flavor are similar to broccoli stem, only sweeter and less vegetal in flavor and significantly less fibrous. Roasted kohlrabi is smooth, almost creamily tender. Similarly to celeriac, raw kohlrabi is crisp and shreds nicely into slaws and noodles.
