Fig And Walnut Kulfi | Walnut Surprise by Chef Anupa | Sanjeev Kapoor Khazana

Mix together the evaporated milk, condensed milk, cream, half of the walnuts. Add the cardamom and the rest of the walnut and fig pieces to the kulfi.

FIG AND WALNUT KULFI

Ingredients

1 litre milk
8-10 dried figs, soaked
4-5 California Walnuts, halved
¼ cup chopped California Walnuts
3-4 tbsps castor sugar
3-4 tbsps powdered sugar
Few saffron strands

Method

1. Heat milk in a deep non-stick pan and cook till it is reduced.
2. Heat castor sugar in a non-stick pan and cook till it caramelizes.
3. Drain and coarsely grind figs.
4. Coat each California Walnut half with caramelized sugar, switch off heat and slightly cool.
5. Add few saffron strands and ground figs to reduced milk and mix. Add powdered sugar and crushed California Walnuts and mix well.
6. Pour the milk mixture in individual kulfi moulds filling ¾ of it.
7. Coarsely crush the caramelized walnuts in a mortar using a pestle
8. Put some crushed caramelized walnuts on the top of the prepared kulfi moulds and cover. Freeze for 10 hours.
9. Demould and serve immediately.
