Financiers | Sanjeev Kapoor Khazana

These tiny bite sized French almond cakes have a slight crisp coating and are light and fluffy inside.

FINANCIERS - (Serves - 4)

Ingredients

¼ cup + 2 tablespoons refined flour
½ cup almond flour
¼ cup melted butter + for greasing
2 eggs
¼ cup castor sugar
A pinch salt
Icing sugar for dusting

Method

1. Preheat oven to 180° C. Grease a shallow muffin mould tray with some butter.
2. Separate eggs whites in a bowl.
3. Combine refined flour, castor sugar and almond flour in another bowl and mix well.
4. Add salt to the egg whites and whisk using an electric beater till light and fluffy.
5. Add egg white mixture gradually to the flour mixture and fold well. Add melted butter and mix well.
6. Fill a piping bag with prepared mixture and pipe out into the greased tray.
7. Put the tray in the preheated oven and bake for 13-15 minutes. Remove from heat, cool and demould.
8. Dust some icing sugar on top and serve.
