Finger millet (Ragi) Idiyappam recipe | கேழ்வரகு இடியாப்பம் செய்முறை | Madras Curry Channel

Softest Finger millet / Ragi Idiyappam (String hopper) recipe. Millets are a healthy replacement to regular white rice and other high carb foods. As this recipe involves steam cooking, very less oil is used making it ideal for guilt free indulgence. The Ragi / Finger millet Idiyappam can be paired with simple palm sugar syrup / jaggery syrup as sweetener along with coconut milk. Brown sugar can also be used if palm jaggery is not accessible.

Serves - 2 - 3 people (Recipe yields 10 small Idiyappams)

Ingredients used:
1. Water - 1 cup
2. Salt - 1/4 tsp
3. Coconut oil - 1 tsp
4. Ragi / Finger millet / Kezhvaragu flour - 1 cup

This recipe video uses bamboo plates for steaming the Idiyappams / String hoppers. You can use Idli plates or Idiyappam plates to steam cook in an Idli cooker. If you have a steamer, use plates which have small pores to steam the Idiyappams.
