Fish and eggplant stew - African food recipe

In this video, i am going to show how to make one of the most delicious Guinean sauce. This is a great sauce that is usually served with rice and you can have for lunch or dinner. The sauce looks more like a very thick stew

It is a simple dish with not so much ingredients, some ingredients are optional
For this you will need:
Ground beef, fish, eggplant finely chop, onion and garlic finely chop, oil, fresh tomato, tomato paste, dried shrimp (or smoked fish), black pepper, bouillon cube, chili and salt.

Directions:
First cook the fish in 2 cups of water with a little bit of salt. Once the fish is done, remove and
let's the fish cool down and remove all the bones and skin.
Next mash the fresh tomato in a large bowl and add the other ingredients in. Add the tomato paste, the fish , the sliced eggplant, the ground beef and the onion and garlic.
Then heat the vegetable oil and stir fry for 2 to 3 min. Add the reserve bouillon from the fish .
Season with some pepper, one bouillon cube and the dried shrimp. At this point you can add your chili or any hot pepper if you like, then let simmer for 30min, make sure to stir the sauce occasionally.
When it ready serve with rice and a little bit of cooked okra and you have some west African seasoning called soumbara garnish with it. And Enjoy!!!!
