Fish Biryani

Ingredients for Soaked Fish:
Water 2 cups
Ginger garlic paste 2 tbsp
Vinegar 1/2 cup
Salt 1 tsp / to taste
Fish 1 kg

Ingredients for Fish Marination:
All-purpose flour 1/2 cup
Lemon juice 2 tbsp
Red chili powder 1 tbsp
Salt 1 tsp / to taste
Ginger garlic paste 1 tbsp
Oil 2-3 tbsp
Soaked fish
Oil (for frying) as required

Ingredients for Fish Biryani:
Oil 1/2 cup
Onion (chopped) 2 cups
Tomatoes (chopped) 1 cup
Ginger garlic paste 1 tbsp
Black peppercorns 1 tbsp
Cloves 1 tsp
Cinnamon sticks 2-3
Star anise 2
Black cardamoms 2
Nutmeg 1 piece
Bay leaf 1
Red chili powder 1 tbsp.
Salt 1 tsp / to taste
Turmeric powder 1 tsp
Water 1/2 cup
Yogurt 1/2 cup
Tamarind (imli) 2 tbsp
Fried fish pieces
Garam masala powder 1 tsp
Green coriander (chopped) as required

Ingredients for Layering:
Prepared Fish Masala
Boiled rice 1 cup + 1 cup (2 cups)
Fried onion as required
Green coriander (chopped) as required
Mint leaves (chopped) as required
Lemon slices as required
Green chilies (chopped) as required
Ginger (julienne) as required
Yellow food color 1 tsp
Tomatoes (chopped) as required

Directions for Soaked Fish Preparation:
1. In a bowl add water, ginger garlic paste, vinegar, salt and fish. Soak the fish for 5-7 mins.
2. Wash the fish thoroughly and after soaking and pat dry before using.
Directions for Fish Marination:
3. In a bowl add flour, lemon juice, red chili powder, salt, ginger garlic paste, oil and mix it well.
4. Now add soaked fish and coat it well. Marinate the fish for 10-15 mins.
5. In a pan heat oil and add marinated fish. Cook each side for 2-3 mins or until 80% done. set aside.
Directions for Fish Biryani Preparation:
6. In a pot heat oil and add onion. Cook for 1-2 mins. Add tomatoes, ginger garlic paste and cook until tomatoes get soft.
7. Now add black peppercorns, cloves, cinnamon sticks, star anise, black cardamom, nutmeg, bay leaf and cook for 2-3 mins. Add red chili powder, turmeric powder, salt and mix it well.
8. Add water and cook for 1-2 mins. Now add yogurt, tamarind and cook for 1-2 mins. Now add fried fish pieces and cook for a minute.
9. Add garam masala powder, green coriander and cover the pot with lid. Cook over low flame for 1-2 minutes.
10. Now in a pot add a layer of prepared Fish Masala, boiled rice, fried onion, green coriander, lemon slices, mint leaves, ginger, tomatoes, prepared fish masala, boiled rice, yellow food color, fried onion, green coriander, lemon slices, mint leaves, green chilies, ginger and tomatoes. Cover and steam over low flame for 10-12 mins.
11. Take off the lid, mix the layers well and your Fish Biryani is ready to serve.

Cooking time: 45 minutes
