FLAX SEED LADDOO

Ingredients

1 cup flax seeds
½ cup grated dried coconut
4 tbsps ghee
½ cup whole wheat flour (gehun ka atta)
½ cup almonds
½ cup edible gum resin (dink/gondh)
8-10 green cardamoms
3-4 long pepper (peepli)
10-15 white peppercorns
1 cup chopped jaggery
½ tsp ginger powder

Method

1. Dry roast flax seeds till they turn fragrant and start popping. Transfer on to a plate and allow to cool slightly.
2. Dry roast the coconut in the same pan till it turns golden brown. Transfer on to a plate and allow to cool slightly.
3. Heat 2 tbsps ghee in the same pan, add whole wheat flour and roast till it turns golden and fragrant. Transfer on a plate and allow to cool slightly.
4. Dry roast almonds till crisp. Transfer on to a plate and set aside to cool slightly.
5. Heat 2 tbsps ghee in the same pan, add the edible gum resin in 2 parts and sauté till they puff up. Transfer on to another plate and allow to cool slightly.
6. Put the green cardamoms in a blender jar, add long pepper and white peppercorns and blend to a fine powder.
7. Similarly, blend almonds and flax seeds to a coarse powder.
8. Coarsely crush the puffed edible gum resin with a rolling pin.
9. Heat a non-stick pan, add the jaggery and ¼ cup water, mix and cook till the jaggery melts.
10. Transfer the ground coarse flax seed powder and almond powder in a large bowl, add roasted whole wheat flour, crushed edible gum resin, ground spice powder, and ginger powder and mix well.
11. Add the jaggery syrup and mix well. Add the roasted dried coconut and mix till well combined.
12. Take small portions of the mixture and start shaping each portion into a ball or laddoo.
13. Serve.
