Foraging UK - Nettle Seed Quesadillas

Through this forage and cook we're going to be looking at how we can forage for a late summer special - Nettle Seeds, which are absolutely packed with, vitamins and minerals and are unbelievably high in protein. They also increase the production of serotonin in your brain which gives you a little feel-good burst. We should call these feel-good Quesadillas.

We're out in Scotland with Forager Vicky heading around one of her foraging course sites before heading back to her camper to cook up something special. We will be adding some extra wild ingredients in to the mix too and here's a list of what these wild and foraged ingredients can be substituted for:

Mugwort - Sage
Nettle Leaves & Silver Weed - Spinach
Greater Plantain Seeds - sunflower seeds
Nut Cheese - Regular Cheese
