FRESH BROAD BEANS IN THEIR PODS RECIPE - Authentic Turkish Food

In this episode I'd like to share with you "Fresh Broad Beans" recipe, the veggie we love the most! Apart from their taste, it is rich in protein, vitamins, minerals and fiber content. Broad bean pods are edible but make sure that you choose beans that are very, very young, otherwise they will be tough.

INGREDIENTS (2 servings)

1/2 kg. (1 pound) very young broad beans
1 onion (finely chopped)
1/2 cup fresh dill (chopped)
2 tbsp olive oil
2 tbsp flour
1/2 tsp granulated sugar
Salt & pepper
Plain yogurt (for serving)

DIRECTIONS

Transfer 1 tbsp flour into a big bowl.
Add 4-5 cups water on top, making sure to beat with a wire whisk, so there are no lumps.
Cut off both ends of the beans, remove any strings then cut into 2-3 pieces and transfer into the floury water, to prevent them from getting dark.
Heat olive oil in a big pan over medium heat, add the onions.
Add a pinch of salt and black pepper, then sautee until the onions are tender for about 5-6 minutes, stirring occasionally.
Then add 1 real teaspoonful flour and cook for about 1 minute, stirring constantly.
Add the drained&rinsed broad beans.
Season to taste and add 1/2 tsp sugar, mix.
Make sure to scrape the bottom of the pan.
Then slowly add 4 cups water, stirring constantly and bring to a boil, over medium high heat.
Mix and check for seasoning.
Reduce heat to medium low, cover and cook for about 1 hour or until very tender.
Check for doneness then turn off the heat.
Add chopped dill and mix gently.
Transfer into a serving plate.
Last but not least, place 2-3 spoons yogurt on top, then you may serve it hot, warm or cold.
