: Fresh Strawberry Tart Honeykki

Todays menu is strawberry tart with whipped cream.
There were strawberries at the supermarket.
So, I was wondering what to make. Then, I decided to make strawberry tart.
I wish the pie crust was thinner for the tart size. Other than that, it was perfect!

* Ingredients(For 6 tart, mold size: 9cm)
: 260g, 20g, 120g, 60g, 3g, 1
: 50g, 50g, 1, 60g, 1
: 3, 50g, 1, 250ml, 25g,
: 200ml, 1 or 10g

Pie crust: 260g cake flour, 20g almond flour, 120g unsalted butter, 60g sugar, 3g salt, 1 egg
almond cream(creme d'amandes): 50g unsalted butter, 50g sugar, 1 egg, 60g almond flour, 1tsp vanilla extract
Custard cream: 3 egg yolks, 50g sugar, 1tsp vanilla extract, 250ml milk, 25g flour
Whipped cream: 200ml heavy cream, 1Tbs condensed milk or 15g sugar
Fresh strawberries, mint for decoration

* | Pie crust

1. In a bowl, add flour, almond flour, slat, sugar, diced unsalted butter and egg and rub together until crumbs.

If you have food processor, add and blend all of ingredients into food processor until it forms crumbs.

2. Put it a bag or plastic wrap and roll to 3mm thickness and leave it in the fridge for 1 hour.

3. Put pie crust on the tart molds and poke the bottom of crust using fork.

* | Almond cream (creme d'amandes)

1. In a large bowl, add and mix butter. And then, add sugar and keep mixing.

2. add and mix egg, vanilla extract and almond flour in the order.

3. Fill 1/2 of pie crust with almond cream .

4. Bake in preheated oven at 170 for 30~40min or until golden brown.
Temperature and baking time may vary due to type of the oven.

5. Remove from the oven, separate tart from the mold and cool completely on wire rack.

* | Custard pastry cream
1. , , , .
1. In a mixing bowl, add and whip egg yolks, sugar and vanilla extract until pale yellow. And then, add and mix flour.

2. Pour the milk and simmer until edge starts to bubble.

3. Slowly pour the (2)milk into (1)egg mixture.

4. Strain the (3)mixture and simmer in a pot on medium low heat.

5. While simmering, keep stirring until soft cream consistency.

6. Set aside to cool in a bowl, sealed with wrap.

* | Decoration

In a mixing bowl, add and whip whipping cream and condensed milk(sugar).

2. Decorate with whipped cream and fresh strawberries.
