Comfort yourself with this ultra-healthy Turmeric Soup.FRESH TURMERIC SOUPIngredients2 inch fresh turmeric, peeled and chopped1½ tbsps oil2 inch celery stick, chopped2 inch ginger piece, chopped12-16 black peppercorns2 bay leaves2 tbsps chopped garlic12-16 coriander stemsSalt to taste2 fresh red chillies, chopped + for garnish12-15 French beans, diagonally sliced12-15 baby corns, diagonally sliced12-15 button mushrooms, thickly sliced200 grams flat rice noodles2 medium carrots, peeled and cut into thin strips100 grams firm tofu, cut into 1 cm cubesChopped Spring onion greens for garnishMethod1. Heat oil in a deep nonstick pan. Add fresh turmeric, celery, ginger, black peppercorns, bay leaf and mix well. Sauté for a minute.2. Add garlic, coriander stems and mix well. Sauté for a minute.3. Add 5-6 cups water and mix well. Add salt, fresh red chilli and mix well.4. Allow to boil for 20 minutes.5. Strain the mixture and transfer in the same pan. Once it comes to a boil, add French beans, baby corns, mushrooms and mix well. Cook for 4-5 minutes. Add rice noodles, carrot strips and adjust salt. Cook for 3-4 minutes.6. Add tofu and mix well. 7. Transfer into serving bowl.
