An American classic, chicken wings coated with a blend of spices and fried until crispy ,topped with a sweet spicy sauce.FRIED CHICKENIngredients8 chicken wings Creole seasoning mix2 tbsps red chilli powder2 tbsps paprika1 tbsp cayenne pepper1 tbsp cumin powder1 tbsp black pepper powder1 tbsp garlic powder1 tbsp dried oreganoSalt to tasteEgg buttermilk mixture2 cups butter milk2 cups milk4 eggsRefined flour (maida) for coatingWest Indies sauce1 cup mango puree½ tbsp Dijon mustard paste4-5 garlic clovesCrushed black peppercorns to taste1 tsp cumin powder1 tsp coriander powder1 tbsp honey¼ cup vinegar1-2 fresh red chilliesSalt to taste Method1. For the seasoning blend, in a bowl, add red chilli powder, paprika, cayenne pepper, cumin powder, crushed black peppercorns, garlic powder, dried oregano and salt. Mix well and set aside.2. In a large bowl, add milk, buttermilk and whisk well. Break in the eggs and whisk well. Set aside.3. Sprinkle the seasoning blend on each chicken wings and apply on both sides. Drop into the butter milk mixture and set aside.4. Take refined flour in another bowl, add 2 tbsps of the seasoning mixture and salt, mix well.5. Heat sufficient oil in a wok, roll the chicken wings in the flour mixture, coat all over and drop in the hot oil. Deep fry till golden brown and crisp.6. Meanwhile, for the sauce, take mango puree, mustard paste, garlic cloves, crushed black peppercorns, cumin powder, coriander powder, honey and vinegar. Add fresh red chilli, and ¼ cup water and blend to a fine paste.7. Add salt in the prepared sauce and mix well.8. Check on the chicken for doneness. Drain on an absorbent paper. 9.
