Fried Fish in Black Bean Sauce | Sanjeev Kapoor Khazana

Deep fried fish fillets tossed in spicy black bean sauce.

FRIED FISH IN BLACK BEAN SAUCE

Ingredients

2 basa fish fillets, cut into medium pieces
Oil for deep-frying
3 tablespoons cornstarch
Crushed black peppercorns to taste
Salt to taste
1 tablespoon sesame oil
1 medium onion, cut into cubes and layers separated
2 spring onion bulbs, chopped
2 tablespoons chopped spring onion greens + for garnishing
½ inch ginger, sliced
½ medium green capsicum, diced
6-7 button mushrooms, sliced
1 tablespoon black bean sauce
1 tablespoon fish sauce
A pinch sugar
White sesame seeds for garnishing

Method

1. Heat sufficient oil in a pan.
2. Combine fish fillets, 2 tablespoons cornstarch, crushed peppercorns and salt and mix well. Deep-fry fish fillets in hot oil till golden and crisp. Drain on absorbent paper.
3. Heat sesame oil in a non-stick pan. Add onion and sauté till golden. Add spring onion bulbs and 1 tablespoon spring onion greens and mix well. Add ginger , green capsicum, mix and sauté for a minute. Add mushrooms, mix and remove from heat.
4. To prepare sauce, combine black bean sauce, fish sauce, crushed peppercorns, salt and sugar in a bowl and mix well.
5. Dissolve cornstarch with some water to make a smooth slurry.
6. Place the vegetable pan back on heat. Add fried fish and mix well. Add prepared sauce and mix again.
7. Add prepared slurry, mix and cook on high heat for a minute. Add remaining spring onion greens and mix well.
8. Serve hot garnished with spring onion greens and sesame seeds.

Preparation time: 5-8 minutes
Cooking Time: 15-20 minutes
