Fried Gnocchi | Sanjeev Kapoor Khazana

Freshly made gnocchi deep fried till crisp and tossed in spice mix.

FRIED GNOCCHI

Ingredients

3 medium potatoes, boiled and peeled
Oil for deep-frying
¼ cup refined flour + as required
Salt to taste
Crushed black peppercorns to taste
½ teaspoon nutmeg powder
2 tablespoons + 1 teaspoon parmesan cheese powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika

Method

1. Heat sufficient oil in a pan.
2. Grate potatoes in a bowl. Add flour, salt, crushed peppercorns, nutmeg powder and 2 tablespoons parmesan cheese powder and mix till well combined.
3. Divide the mixture into small equal portions and shape them into oval.
4. Coat a fork with some flour. Place each portion on the back of a fork and lightly flatten to resemble its texture and roll it into the shape of gnocchi.
5. To prepare spice mix, combine onion powder, garlic powder, paprika, crushed peppercorns and salt in a bowl and mix. Add 1 teaspoon parmesan cheese powder and mix well.
6. Deep-fry gnocchi’s in hot oil till golden and crisp. Drain on absorbent paper and sprinkle some spice mix on top and mix well.
7. Serve hot.
