Undhiyu is a special Gujarati dish, eaten during winter. It is extremely healthy as it contains nutritious vegetables and it’s also filling. Undhiyo can be eaten either with puri, chapati or paratha . It is also called Oondhiyu. It is prepared joyfully during Makarsankrati.

Ingredients Include:
1) Vegetable
50 grams Green Peas
50 grams Valor
50 grams Tuvar Dana
50 grams Surti Papdi without dana
50 grams Pavta
50 grams Chana
50 grams Surti Papdi with dana
1 tbsp Sugar
1 tbsp Salt
½ tbsp Turmeric Powder
Water as required

2) Undhiyu Gravy
½ Coconut
3 Tomatoes (without seeds)
2 tbsp Red Chilli Powder
3-4 Green chillies
Water as required

3) Muthiya Balls
1 tbsp Wheat flour
2 tbsp Gram flour
1 tbsp Dhokla flour
1 & ½ tsp Dhaana Jeeru
1 & ½ tsp Salt
1 tsp Red Chilli powder
½ tsp Haldi
2 tsp Green chillies
¼ tsp Soda
1 & ½ tsp Lime Juice
½ tsp Hing
2 tsp Sugar
1 cup Methi
½ cup Coriander leaver
Water as required
Oil for frying

4) Banana chips
1 & ½ Raw banana
Oil for frying

5) Undhiyu
Undhiyu gravy
Pressure cooked vegetables
Muthiya Balls
Banana chips
2-3 cups Oil
1 & ½ tbsp Dhaana Jeeru
1 tsp Turmeric Powder
2 tsp Garam Masala
2-3 tbsp Undhiya Powder
2 tbsp Sugar
1 & ½ tbsp Salt
1 cup Methi
1 cup Coriander Leaves
