A must-have dessert, Gajar halwa gives us a sweet nostalgia for childhood with its heavenly taste of fresh carrots and crunchy nuts.

GAJAR KA HALWA

Ingredients

4-5 large carrots (gajar), grated
2 tablespoons ghee
¾ cup sugar
1 teaspoon green cardamom powder
1 cup milk
¼ cup condensed milk
½ cup khoya/mawa
5-6 almonds, blanched, peeled and chopped
10-15raisins
7-8 cashewnuts, chopped

Method

1. Heat ghee in a deep non-stick pan. Add carrots, mix and cook for 4-5 minutes, stirring occasionally.
2. Add sugar and half of cardamom powder, mix and cook till sugar melts. Add carrot, mix, cover and cook till the carrots absorb the milk.
3. Add condensed milk and mix. Add khoya, mix, cover and cook on low heat for 20-25 minutes, stirring occasionally.
4. Add remaining cardamom powder, ¾ of almonds, raisins and ¾ of cashewnuts, mix and cook for 1-2 minutes.
5. Serve warm garnished with remaining almonds and cashewnuts.
