Gajar Kishmish and Black Olive Salad #WellnessWednesday ProV Sanjeev Kapoor Khazana

Fruity, nutty and veggie salad with a mildly sweet-spicy dressing. All-in-all, a colourful, melange of tastes and textures.

GAJAR, KISHMISH AND BLACK OLIVE SALAD

Ingredients

4-5 large carrots (gajar), peeled, and thickly grated
cup raisins (kishmish)
6-8 black olives, deseeded and sliced
2 tbsps lemon juice
Crushed black peppercorns to taste
1 green chilli, finely chopped
1 tbsp honey
Salt to taste
tsp black salt
6 walnut kernels, crushed
1 tsp extra virgin olive oil
6-8 fresh mint leaves

Method

1. Mix together lemon juice, crushed black peppercorns, green chilli, honey, salt, black salt, walnuts, raisins, black olives and extra virgin olive oil in a bowl.
2. Take carrots in another bowl, add the prepared mixture and toss till well combined.
3. Transfer in a serving bowl, and serve garnished with mint leaves.
