A twist to our regular Makhani. Delicious, healthy and creamy makhani made with fresh red carrots as the base of the curry, flavourful spices and finally paneer make it an outstanding curry for any day! GAJAR MAKHANIIngredients3 medium red carrots (gajar), roughly chopped1½ tbsps butter300 grams cottage cheese (paneer), cut into 1 inch cubes1 tbsp melon seeds1 tbsp poppy seeds8-10 cashew nuts, halved3-4 green cardamoms6-8 black peppercornsA small piece of mace blade1 inch ginger, roughly chopped4-5 garlic cloves½ tsp turmeric powder1 tsp red chilli powderSalt to tasteA large pinch of dried fenugreek leaves (kasuri methi) powder2 tbsps fresh cream + for garnish¼ tsp garam masala powderFresh cream for garnishMethod1. Put the carrots in a cooker. Add melon seeds, poppy seeds, cashew nuts, green cardamoms, black peppercorns, mace, ginger, garlic, turmeric powder, red chilli powder, salt and 1½ cups water and mix well. Cook for 3-4 whistles.2. Open the cooker once the pressure has reduced completely.3. Discard the green cardamoms and mace blade and blend the mixture to a fine puree using an electric hand blender. 4. Strain the mixture into a non-stick pan. Place it on heat and cook for 1-2 minutes.5. Add dried fenugreek leaves powder and mix well. 6. Stir in the butter and cook till it melts. Add the cottage cheese cubes and fresh cream and gently mix till well combined. Cook for 1-2 minutes. 7. Add garam masala powder, mix and transfer into a serving bowl. Garnish with fresh cream and coriander sprig. Serve hot.
