It tastes great with anything and everything!GAJAR MIRCH KA ACHAARIngredients4 large carrots (gajar)12-15 light green chillies (mirch)¼ cup methi kuriya1 tbsp split yellow mustard seeds3 tbsps mustard oil1½ tsps fennel powder½ tsp asafoetida (hing) ½ tsp turmeric powder1 tsp red chilli powderSalt to tasteBlack salt to taste¼ cup vinegarMethod1. Pee the carrots and cut them into 2 inch thick strips.2. Slit the green chillies and deseed them. 3. Put the methi kuriya in a blender jar, add split yellow mustard seeds and blend to a fine powder.4. Heat mustard oil in a non-stick pan, let the oil smoke up.5. Add the blended powder, fennel powder and asafoetida and sauté for 20 seconds. Add the carrot and sauté for 2-3 minutes. 6. Add the green chillies, turmeric powder, red chilli powder and salt and mix well. Cook for 1-2 minutes.7. Add black salt and mix well. Add vinegar, mix and cook for a few seconds. Take the pan off the heat and allow to cool completely.8.
