GAJAR MIRCH KA ACHAAR

Ingredients

4 large carrots (gajar)
12-15 light green chillies (mirch)
¼ cup methi kuriya
1 tbsp split yellow mustard seeds
3 tbsps mustard oil
1½ tsps fennel powder
½ tsp asafoetida (hing)
½ tsp turmeric powder
1 tsp red chilli powder
Salt to taste
Black salt to taste
¼ cup vinegar

Method

1. Pee the carrots and cut them into 2 inch thick strips.
2. Slit the green chillies and deseed them.
3. Put the methi kuriya in a blender jar, add split yellow mustard seeds and blend to a fine powder.
4. Heat mustard oil in a non-stick pan, let the oil smoke up.
5. Add the blended powder, fennel powder and asafoetida and sauté for 20 seconds. Add the carrot and sauté for 2-3 minutes.
6. Add the green chillies, turmeric powder, red chilli powder and salt and mix well. Cook for 1-2 minutes.
7. Add black salt and mix well. Add vinegar, mix and cook for a few seconds. Take the pan off the heat and allow to cool completely.
8. Serve as required.
