Gathiya Nu Shaak Gujarati Recipe Sanjeev Kapoor Khazana

This is the Gujarati version of Gatte ki Sabzi of Rajasthan and the Shev Bhaaji from Jalgaon is a gathiyaa-based spicy curry that tastes great with pav (buns).

GATHIYA NU SHAAK

Ingredients

2 cups gathiya
1 tbsps oil
1 tsp mustard seeds
1 tsp cumin seeds
8-10 curry eaves
2-3 green chillies, chopped
1 tsp chopped garlic
1 tsp chopped ginger
1 medium onion, chopped
2 medium tomatoes, chopped
tsp turmeric powder
1 tsp coriander powder
tsp cumin powder
1 tsp red chilli powder
Salt to taste
2 tbsps chopped fresh coriander leaves + for garnish
1 tsp sugar
Rotis to serve

Method

1. Heat oil in a non-stick pan. Add mustard seeds and cumin seeds and cook for a few seconds. Add curry leaves, green chillies, garlic and ginger and saut for 1-2 minutes.
2. Add onion, mix and cook till translucent.
3. Add tomatoes, mix and cook till soft and pulpy.
4. Add turmeric powder, coriander powder, cumin powder, and red chilli powder and mix well. Cook for 1-2 minutes.
5. Add 2 cups water, mix and cook till the mixture comes to a boil.
6. Add salt, mix and cook for 1 minute.
7. Add gathiya and coriander leaves and mix well. Add sugar, mix and cook for a minute.
8. Transfer into a serving bowl, garnish with coriander leaves and serve hot with rotis.
