Delicious to eat too, enjoy with phulkas, paranthas or any flat-bread you like.GHOTLELYA VANGYACHI BHAJIIngredients5-6 medium green brinjals, stemmed and cut into 1 inch pieces3-4 tbsps oil1 tsp mustard seeds1 tsp cumin seeds2 green chillies, chopped1 inch ginger, chopped1 tbsp chopped garlic1 sprig of curry leaves2 medium onions, choppedSalt to taste½ tsp turmeric powder1 tsp red chilli powder½ tsp garam masala powder2 tbsps chopped fresh coriander leavesSpring onion bulb for servingGreen chilli for servingJowar Bhakri for servingMethod1. Heat oil in a pressure cooker. Add mustard seeds and once they start to splutter, add cumin seeds, green chillies, ginger, garlic and sauté till golden brown.2. Add curry leaves, onions, salt and sauté till onions turn golden brown.3. Add green brinjals, turmeric powder, red chilli powder, garam masala powder and mix well.4. Add 1½ cups water and mix well. Cover with the lid and cook on medium heat till 4-5 whistles are released. Open the lid once the pressure settles completely. 5. Add coriander and mash the brinjals well.6.
