A Maharashtrian-special sabzi prepared with green brinjals and mashed. It's so easy to make and is great for days when you're lazy to make something time-consuming. Delicious to eat too, enjoy with phulkas, paranthas or any flat-bread you like.

GHOTLELYA VANGYACHI BHAJI

Ingredients

5-6 medium green brinjals, stemmed and cut into 1 inch pieces
3-4 tbsps oil
1 tsp mustard seeds
1 tsp cumin seeds
2 green chillies, chopped
1 inch ginger, chopped
1 tbsp chopped garlic
1 sprig of curry leaves
2 medium onions, chopped
Salt to taste
½ tsp turmeric powder
1 tsp red chilli powder
½ tsp garam masala powder
2 tbsps chopped fresh coriander leaves
Spring onion bulb for serving
Green chilli for serving
Jowar Bhakri for serving

Method

1. Heat oil in a pressure cooker. Add mustard seeds and once they start to splutter, add cumin seeds, green chillies, ginger, garlic and sauté till golden brown.
2. Add curry leaves, onions, salt and sauté till onions turn golden brown.
3. Add green brinjals, turmeric powder, red chilli powder, garam masala powder and mix well.
4. Add 1½ cups water and mix well. Cover with the lid and cook on medium heat till 4-5 whistles are released. Open the lid once the pressure settles completely.
5. Add coriander and mash the brinjals well.
6. Transfer into a serving bowl and serve hot with spring onion bulb, green chilli and jowar bhakri.
