Ginger Barfi | Allam Murabba in Telugu | How to make Ginger Candy | Allammurabba Recipe

INGREDIENTS
1. Ginger - 1/2 Cup
2. Sugar - 2 Cups
3. Clarified Butter (Ghee) - 1 Teaspoon
4. Salt - A Pinch

Let's see how to prepare ginger candy. For 1 part ginger, take 4 parts sugar. Jaggery instead of sugar could be used. Grind washed and cleaned ginger into a paste. Don't add water. Prepare syrup first. Add 2 cups sugar (1 1/2 cup for less sweetness) and 1 cup water to a pan. Mix till sugar melts in water. Mix till the syrup become sticky. As sugar syrup starts to simmer, check if proper consistency is obtained. If the sugar falls like a thread when we lift the spoon, then proper consistency is obtained. To check for proper consistency, another method is to take water in a bowl and put some sugar syrup in it. As you move it closer, if becomes like a ball then the consistency of the sugar syrup is right. After proper consistency is obtained, add prepared ginger paste, a pinch of salt and mix. Mix and simmer for 10-15 minutes. As the solution starts to give out more foam, apply clarified butter (ghee) to a wide plate. Applying clarified butter (ghee) will make the removing of ginger candy easier. Pour prepared ginger-sugar solution on the plate. Spread the solution and check the thickness of the solution. Let the solution cool down. Don't let the solution cool down completely. When the plate is still luke warm, cut the ginger candy. It can be cut when the candy is completely cooled also, but it's easier to cut when luke warm. Cut in desired shape and size. Eating one piece daily will keep our health in check.
