No meal is complete without pickles. Ginger pickle is not only tasty but also aids digestion. Here is how you can easily make it at home in no time.Ingredients:1 cup finely chopped Ginger1/2 tsp Mustard seeds4-5 dry Red Chillies5 finely chopped Green Chillies1/4 tsp Hing1/4 tsp Turmeric powder1/4 tsp Red Chilli powder1/4 cup Tamarind pulp1/4 cup Jaggery1/4 cup OilFew Curry LeavesSalt to tasteMethod: In a pan heat the Oil and splutter Mustard seeds and then put dry Red Chillies, finely chopped Ginger, Green Chillies and saute well. Soak Tamarind in 1/2 cup water and separate the pulp. Also, dissolve the Jaggery in 3/4 cup water and keep aside. Fry the Ginger till brown. Add Curry leaves, Asafoetida, Turmeric powder, Red Chilli powder and fry for a minute. Put in Tamarind pulp, dissolved Jaggery and Salt. Boil this mixture on low flame for 8-10 minutes.
