Ginger Pickle/Inji Puli - Onam Special Series No 2 | Indian Mom's Kitchen

No meal is complete without pickles. Ginger pickle is not only tasty but also aids digestion. Here is how you can easily make it at home in no time.

Ingredients:
1 cup finely chopped Ginger
1/2 tsp Mustard seeds
4-5 dry Red Chillies
5 finely chopped Green Chillies
1/4 tsp Hing
1/4 tsp Turmeric powder
1/4 tsp Red Chilli powder
1/4 cup Tamarind pulp
1/4 cup Jaggery
1/4 cup Oil
Few Curry Leaves
Salt to taste

Method: In a pan heat the Oil and splutter Mustard seeds and then put dry Red Chillies, finely chopped Ginger, Green Chillies and saute well. Soak Tamarind in 1/2 cup water and separate the pulp. Also, dissolve the Jaggery in 3/4 cup water and keep aside.
Fry the Ginger till brown. Add Curry leaves, Asafoetida, Turmeric powder, Red Chilli powder and fry for a minute. Put in Tamarind pulp, dissolved Jaggery and Salt. Boil this mixture on low flame for 8-10 minutes. Cool and serve.
