GINGERMAN COOKIES

Ingredients

1½ tsps dried ginger powder
2 cup refined flour (maida) + for dusting
1 tsp baking soda
1 tsp cinnamon powder
¼ cup castor sugar
¼ cup milk
½ cup melted butter
4 tbsps golden syrup
Glaze
2 cups icing sugar
Drops of green food colour as required
Drops of red food colour as required

Method

1. Preheat oven to 180º C.
2. Sift refined flour, baking soda, cinnamon powder and ginger powder in a large bowl.
3. Add castor sugar, milk, butter, golden syrup and mix well. Gently knead till the mixture comes together. Refrigerate for 1 hour.
4. To make the wreath, take a portion of the dough and place it on a parchment sheet. Roll out the dough to a medium disc. Cut a circle with a 6 inch round cookie cutter. To make a hole, place a 4 inch round cutter in the middle of the circle and cut out another smaller circle and remove it to make a ring.
5. Place the prepared ring on a baking tray and bake for 15-20 minutes. Remove from the oven and allow to cool completely.
6. Similarly, roll out the remaining dough into a disc of medium thickness and cut out different shaped cookies using festive cookie cutter of your choice.
7. Place the cut out shapes on to a lined baking tray and bake for 8-10 minutes.
8. To make the glaze, take icing sugar in a large bowl, add 2½ tbsps water and mix till well combined. Beat it with an electric beater till the mixture turns light.
9. Divide the glaze into three potion 3 portions. Add green food colour in one of the portions and red food colour in the other. Keep the remaining portion as it is.
10. Remove the cookies out of the oven and allow to cool completely.
11. To decorate the cookies, transfer the prepared glaze into individual piping bags.
12. Glaze the cookies as required. Let them dry out.
13. Stick the glazed cookies on the prepared ring using the glaze. Tie a bow with a ribbon and serve as required.
