This Goran Sorak Curry is mildly spiced and is super comforting when served along with some steamed rice.GOAN SORAK CURRYIngredients¾ cup scraped fresh coconut2 medium onions 3 dried Kashmiri red chillies1½ tsps coriander seeds 6-8 garlic cloves½ inch ginger piece1 tsp cumin seeds½ tsp turmeric powder2 tbsps coconut oil3 kokum petals2 green chillies, slitSalt to tasteFresh coriander sprig for garnishSteamed rice to serve Method1. Finely chop one onion and set aside. Roughly chop the remaining onion and transfer them into a blender jar.2. Add coconut, dried red chillies, coriander seeds, garlic, ginger, cumin seeds, turmeric powder and ½ cup water and blend to a fine paste.3. Heat oil in an earthen pot, add the finely chopped onion and sauté till golden brown.4. Add the prepared paste and mix well. Cook till the oil separates. Add 2½ cups water and mix till well combined. Let the mixture come to a boil. 5. Add kokum petals, green chillies and salt and mix well. Cook for 2 minutes. Take the pot off the heat.6.
