Golden Beet, Peach and Mozzarella Caprese Salad

This summer we've been enjoying all the produce. This is a great make-ahead dish that you can serve as leftovers or in a lunchbox the next day - I normally prep my greens and beets in the evening and serve cold from the fridge.

While we love tomato and mozzarella caprese salads, the beets subbed in for tomatoes make for a sweet contrast with salty cheese (I use fresh mozzarella here, but you can also try goat cheese). Sweet summer peaches and toasted pine nuts add even further flavor and contrast. All the ingredients are fresh and easy to come by this time of year!
