Great Combo Meal - Egg Curry - Butter Curd Rice - Instant Mango Pickle - Mirchi Bajji - Guddu Pulusu | Vahchef - VahRehVah

Great food is not about taste of a recipe - It is the combination of meal that makes it super great.here is one traditional combo of my Choice
"Soft boiled eggs cooked in a tangy tamarind sauce combined with spices to give a zing taste and flavor to the taste buds. A popular south Indian dish popularly known as Guddu pulusu or kodi guddu pulusu - Egg Curry
Ingredients
1 tsp chilli pdr
3 piece chopped chilli
3 number chopped onion
1 tbsp coriander pdr
1 tsp cumin
1 tsp cumin pdr
3 springs curry leaves
10 number eggs
1 tsp fenugreek leaves
1 tbsp ginger garlic paste
1 tsp mustard seeds
3 tbsp oil
1 to taste salt
100 ml tamarind juice
1 pinch turmeric

Directions
• Heat oil in a vessel and mustard seeds and let them splutter. Now add methi seeds, cumin and add onions curry leaves and fry Add chopped onions and green chillies and fry till they turn light brown.
• add ginger garlic paste
• Now add chilli pwd, turmeric pwd, coriander pwd and cumin pwd, mix well and saute for few seconds
• Add tamarind extract and 2 cups of water and bring to a boil. Add salt and sugar and reduce heat and let it simmer for 10 mts. Add the boiled and fried eggs and let it cook in the gravy for 3 minutes or till you get the required gravy consistency.
• Garnish with chopped coriander leaves. Serve this hot steamed rice or rotis

Curd rice or Yogurt rice is a simple delicacy made in South India. Cooked rice is combined with curd or yoghurt and then seasoned with chilly, curry leaves, ginger, urad dal, mustard seeds, channa dal and hing. This is truly comfort food! Curd rice from South India tastes great with just a pickle or chutney and also with a daal (lentils) or meat dish

Curd Rice

Ingredients
1 pinch chopped coriander leaves
300 ml curds
1 springs curry leaves
1 piece Ginger
1 number green chillies
1 pinch hing
1 pinch mustard seeds
1 tbsp oil or ghee
200 grams rice
1 to taste salt
1 cup sour cream or fresh cream
1 tsp urad dal
Butter

Directions
1. Boil rice, adding salt. cool slightly.

2. mix with curds

3. chop green chillies and ginger fine.

4. Heat oil. fry mustard seeds urad dal cumin and asafoetida.

5. add curry leaves and chopped ingredients. saute for 2 minutes

6. Switch off the fire and add the rice curds mixture to the pan.

7. mix well. serve with with pickles
