Greek Style Marinated Salmon & Rice Bake Ken Panagopoulos

Ingredients List:

1 lb. salmon
2 lemons
2 cups rice
4 cups water
2 tbsp. roasted red pepper paste
Bunch of dill
30g feta cheese
1/3 cup Greek extra virgin olive oil
Salt & pepper to taste

Method:

Pre-heat oven to 375*f/180*c
In a plastic bag, add 1/4 cup olive oil, the zest of 1 lemon, the juice of 2 lemons and dill
Mix well and place salmon in bag to marinate
In a Dutch oven, add rice, water, remaining olive oil and red pepper paste and mix well to combine
Place marinated salmon over rice and bake uncovered for 25-35 minutes or until the rice has completely absorbed the liquid
