Greek Vegan Cake: Cinnamon Raisin Cake from Kalamata

Ingredients
3 cups (400g)
1/4 teaspoon salt
1 cup raisins
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoons ground cloves
zest of an orange
1 cup light olive oil
1 cup (220g) granulated sugar
1 and 1/3 cup orange juice
1/2 teaspoon baking soda
2 teaspoons pure vanilla extract
Flax egg: 4 tablespoons ground flax seeds plus 1/2 cup water (or 2 eggs)
Garnish: confectioner's sugar and ground cinnamon
Instructions
Preheat the oven to 350 F, 180 C.
Combine the flax seeds and water together and set aside.
Combine the flour, baking powder, cinnamon, cloves, salt, and orange zest together in a bowl and whisk them together.
In a large mixing bowl combine the oil, sugar, flax mixture, and vanilla and whisk together until incorporated.
Combine the baking soda and the orange juice together and add to the oil mixture. Whisk together.
Add the flour mixture but set aside a quarter cup of it and combine it with the raisins. Whisk together until the flour is incorporated and then add the raisins and fold them in with a spatula.
Lightly grease a 9 by 13-inch baking pan with olive oil or baking spray. Spread the cake batter evenly in the pan.
Bake on the center rack of the preheated oven for 35 minutes or until a cake tester that has been inserted in the center of the cake comes out clean or with a few moist crumbs attached.
Allow the cake to cool at room temperature.
Cut into serving pieces and dust with confectioner's sugar and cinnamon.
