Green Chili Mutton Korma

Ingredients for coriander paste:
Coriander seeds 1/3 cup
Oil 2 tbsp
Desiccated coconut 1/3 cup

Ingredients for Green Chili Pasta:
Green chilies 10-12
Oil (for frying) 2 tbsp
Onion 1/4 cup
Garlic cloves 2-3
Fennel seeds 1 tbsp
Cloves 2
Black peppercorns 8


Ingredients for Green chili mutton korma:
Oil 1 cup
Onion (chopped) 1/2 cup
Green chili paste 1/2 cup
Mutton 1 kg
Coriander paste 2 tbsp
Tomatoes (Chopped) 1/2 cup
Salt 1 tsp / to taste
Turmeric powder 1/2 tsp
Water 3 cups
Green chilies (slit) for garnishing
Green coriander (Chopped) for garnishing

Directions for Coriander paste preparation:
1. In a pan heat oil and coriander seeds. Fry for 1 minute.
2. In a blender add fried coriander seeds, desiccated coconut. Blend well into smooth paste. Your coriander paste is ready. Set aside.
Directions for green chili paste preparation:
3. In a pan heat oil and add green chilies. Fry for 1 minute.
4. In a blender add fried green chilies, onion, garlic, fennel seeds, cloves, black peppercorns and blend well into smooth paste. Your green chili paste is ready.
Ingredients for Green chili mutton korma preparation:
5. In a pan heat oil and add onion and cook until translucent.
6. Add green chili paste and stir fry for a minute.
7. Add tomatoes and cook until tomatoes get soft. Add coriander paste and mix well.
8. Add mutton cook until mutton changes color. Add salt and turmeric powder and mix well.
9. Add water and cover and cook for 30-45 minutes or until meat is fully done.
10. Garnish with green chilies and green coriander. Your green chili mutton korma is ready.
