Green Garlic Tawa Pulao Winter Recipe Sanjeev Kapoor Khazana

Tawa Pulao with fresh green garlic and pav bhaji masala to spice up the vibrant green preparation. Dont forget the dollop of butter.

GREEN GARLIC TAWA PULAO

Ingredients

bunch of green garlic, finely chopped with the stalks
3 cups cooked Basmati rice
3 tbsps oil
1 tsps cumin seeds
3-4 cloves
2 bay leaves
2 spring onion bulbs, finely chopped
tbsp ginger-green chilli paste
1 small green capsicum, finely chopped
cup green peas
Salt to taste
tsp turmeric powder
2 tsps pav bhaji masala
cup blanched spinach puree
tsp dried fenugreek leaves powder
tbsp lemon juice
tsp garam masala powder
2 tbsps chopped fresh coriander leaves
2 tbsps butter
2 tbsps chopped spring onion greens
Slit fresh red chilli for garnish
Fresh coriander sprig for garnish

Method

1. Heat oil in a non-stick shallow tawa. Add cumin seeds, cloves and bay leaves and saut till fragrant.
2. Add spring onion bulbs and mix well. Cook for 1-2 minutes.
3. Add green garlic and saut for 1-2 minutes. Add ginger-green chilli paste and saut for 1-2 minutes.
4. Add green capsicum, green peas and mix well. Cook for 2-3 minutes. Add salt, turmeric powder and pav bhaji masala and mix well. Add cup water and saut for 1-2 minutes.
5. Add blanched spinach puree and mix. Cook for 1 minute.
6. Add the rice and toss till well combined. Add dried fenugreek leaves powder, lemon juice, garam masala powder and coriander leaves and mix well.
7. Add butter and mix till well combined. Add spring onion green and mix. Transfer on a serving plate. Serve hot garnished with slit red chillies and coriander sprig.
