GREEN MOONG TIKKI

Ingredients

2 raw bananas
2 cups green moong sprouts
1 tsp red chilli powder
½ cumin powder
¼ tsp turmeric powder
¾ tsp coriander powder
1 tsp dried mango powder (amchur)
Salt to taste
2-3 tbsps chopped fresh coriander leaves
Bread crumbs as required
1 tbsp white sesame seeds
½ tbsp black sesame seeds
Crushed black peppercorns to taste
Corn flour slurry for coating
Oil for deep frying
To serve
Green chutney
Onion rings
Fresh mint sprigs

Method

1. Heat sufficient water in a steamer. Place a steamer basket on it and arrange the raw bananas on it. Place another steamer basket over it and put the green moong sprouts. Cover and steam for 20-25 minutes.
2. Switch the heat off.
3. Peel the steamed raw bananas and place them on a large plate. Add the steamed moong sprouts and mash well with a masher.
4. Add red chilli powder, cumin powder, turmeric powder, coriander powder, dried mango powder, salt and coriander leaves and mix till well combined.
5. To make the tikkis, take a small portion of the mixture and shape it into a ball. Flatten it to a thin disc.
6. Take bread crumbs on a plate. Add white sesame seeds, black sesame seeds, salt and crushed black peppercorns and mix well.
7. Dip each tikki into the corn flour slurry. Place on bread crumbs mixture and coat well from both sides.
8. Heat sufficient oil in a kadai. Gently slide in the tikkis a few at a time and deep fry till golden brown and crisp. Drain on an absorbent paper.
9. Serve hot with green chutney, onion rings and mint sprigs.
