Green Tea Cake with White Chocolate Frosting | Sanjeev Kapoor Khazana

Freshly baked grean tea flavoured cake with white chocolate frosting. A must try recipe !

GREEN TEA CAKE WITH WHITE CHOCOLATE FROSTING

Ingredients

1-2 green tea bags
1 cup chopped white chocolate
100 grams butter + for greasing
15 grams castor sugar
200 grams condensed milk
Few drops edible green color
1 teaspoon vanilla essence
125 grams refined flour + for dusting
1 teaspoon baking powder
½ teaspoon baking soda
½ cup fresh cream
1 cup whipped cream
Sugar syrup as required
Edible golden balls for topping

Method

1. Preheat oven at 180ºC. Grease 2 baking tins with some butter and dust some refined flour.
2. Cream together butter and castor sugar using an electric blender till soft and fluffy. Add condensed milk and mix well.
3. Take a green tea bag in a bowl. Add 2-3 tablespoons warm water and set aside. Add green tea decoction to butter cream mixture, mix and whisk well using an electric blender. Add edible green color and vanilla essence and mix well.
4. Sift together refined flour, baking powder and baking soda into the butter cream mixture and fold well.
5. Divide the prepared batter equally into the greased baking tins. Put the baking tins on a baking tray, place the baking tray in preheated oven and bake for 20-22 minutes. Remove from oven and demould.
6. To prepare icing, heat cream in a non-stick pan and let it warm.
7. Take white chocolate in a bowl. Add warm cream and mix well till chocolate melts. Add whipped cream and fold gently. Refrigerate to set.
8. Trim the upper crust of the cakes and reserve. Slice the cakes horizontally into halves.
9. Place a slice of cake on a worktop, brush some sugar syrup, spread some icing mixture. Place another slice on top and repeat the process until all the slices are used up. Trim the edges of the cake. Cover the cake with some icing.
10. Fill a piping bag with the remaining icing and pipe out rosettes on the outer side on top of the cake. Crumble the reserved upper crust of the cakes and sprinkle on top. Decorate with edible golden balls.
11. Serve.
