Grilled Chicken Kathi Roll | Sanjeev Kapoor Khazana

Who doesn’t love Kathi Rolls? This grilled chicken wrap is a sure shot hit and very easy to make.

GRILLED CHICKEN KATHI ROLL

Ingredients

2 leftover grilled boneless chicken breasts
4-6 leftover rotis
1 tablespoon oil
1 medium onion, sliced
Salt to taste
1 medium tomato, seeded and cut into juliennes
¼ teaspoon turmeric powder
1 teaspoon + a pinch red chilli powder
1 teaspoon cumin powder
1 teaspoon coriander powder
¼ cup chopped fresh coriander leaves
A pinch garammasala powder
½ medium green capsicum, cut into juliennes
1 teaspoon chaat masala+ for sprinkling
Green chutney as spreading

Method

1. Heat oil in a non-stick pan.
2. Tear grilled chicken into pieces and place onto a plate.
3. Add ¾ of onion to hot oil and salt and sauté onion on medium heat till golden. Add tomato, mix and cook for a minute. Add turmeric powder, 1 teaspoon chilli powder, cumin powder and coriander power, mix and cook on medium heat for 4-5 minutes.
4. Add chopped coriander and grilled chicken and mix well. Add some water, mix and cook for 2-3 minutes.Switch off heat, add salt and garammasala powder and mix well.
5. To prepare salad, combine green capsicum, remaining onion, salt, chaat masala and a pinch chilli powder and mix well.
6. Take eachroti, spread some green chutney over, put some salad and chicken mixture on one side, roll it and halve.
7. Serve immediately.

Preparation Time: 5-8 minutes
Cooking Time: 10-12 minutes
