Grilled Mushroom Melts | Sanjeev Kapoor Khazana

A sandwich is something that you can eat any time of the day. This loaded one has a cheesy mushroom mixture sandwiched between ciabatta bread slices and grilled to a crisp.

GRILLED MUSHROOM MELTS

Ingredients

8-10 button mushrooms, thinly sliced
1 chiabatta bread, sliced
1 tablespoon oil
1 medium onion, finely chopped
1 tablespoon chopped garlic
Salt to taste
Crushed black peppercorns to taste
½ teaspoon mixed dried herbs
Butter for spreading + greasing
Grated cheddar cheese as required
Grated mozzarella cheese as required

Method

1. Preheat an electric griller.
2. Heat oil in a non-stick pan. Add onion and sauté for a minute. Add garlic and sauté till golden.
3. Add mushrooms, mix and cook for 1 minute. Add salt and crushed peppercorns and mix. Add dried herbs, mix and cook for 2-3 minutes.
4. Spread some butter on each bread slice. Put some cheddar cheese, mushroom mixture and some mozzarella cheese on top of half bread slices and cover with remaining bread slices.
5. Grease the preheated electric griller with some butter. Grill the prepared sandwiches from both sides till golden.
6. Cut into halves and serve hot.
