Grilled Pineapple Slush | Sanjeev Kapoor Khazana

Grilling pineapples adds a lovely smoky flavour and takes this sweet- tangy cooler to another level. Watch this video to find out how to make this recipe.

GRILLED PINEAPPLE SLUSH - (Serves - 4)

Ingredients

2 medium pineapples, peeled and cut into roundels
18-20 ice cubes
Butter for greasing
2-3 tablespoons castor sugar
3-4 tablespoons lemon juice
Black salt to taste
Salt to taste
2 teaspoons chaat masala
12-15 fresh mint leaves
Ice cubes as required
Fresh mint sprigs for garnishing

Method

1. Heat an electric griller and grease with some butter. Place the pineapple roundels and grill till golden. Transfer in a bowl and cool.
2. Grind the grilled pineapples to make a smooth puree.
3. Strain the pineapple puree in a blender. Add castor sugar, lemon juice, black salt, salt, chaat masala and mint leaves, cover and blend to make a smooth mixture. Add ice cubes and coarsely blend.
4. Serve chilled garnished with mint sprigs.
