Cornmeal tortilla wraps with hummus spread and grilled exotic veggies. A must try recipe !

GRILLED VEGETABLE HUMMUS WRAP

Ingredients

½ medium long brinjal, thinly sliced and soaked
½ medium green zucchini, thinly sliced
1 medium yellow capsicum, cut into strips
1 medium red capsicum, cut into strips
1 large tomato, deseeded and cut into strips
½ cup hummus
4 tortillas
2 tablespoons olive oil
Salt to taste
Crushed black peppercorns to taste
8 cheese slices

Method

1. Take drained brinjals in a bowl. Take zucchini, yellow capsicum, red capsicum, olive oil, salt and crushed peppercorns and mix well.
2. Heat a non-stick grill pan. Add vegetables and grill on high heat till golden specks appear. Transfer on a plate.
3. Spread some hummus on one side of each tortilla. Put grilled vegetables and tomato slices on other side.
4. Place 2 cheese slices in the center of each prepared tortillas and roll them into wraps.
5. Diagonally slice and serve.
