This Grilled Veggie Sandwich is packed full of marinated veggies and a creamy spread filled with garlic and thyme.GRILLED VEGGIE SANDWICH Ingredients8 white bread slices, toasted1 tablespoon oil + for greasingCrushed black peppercorns to tasteSalt to taste½ teaspoon red chilli flakes2-3 fresh thyme sprigs8-10 garlic cloves½ medium yellow zucchini, cut into roundels½ medium green tomato, cut into roundels½ medium red tomato, cut into roundels½ medium onion, cut into roundels½ medium green zucchini, cut into roundels1 medium brinjal, cut into roundels2-3 tablespoons mayonnaise 1 teaspoon sriracha sauceIceberg lettuce leaves as requiredMethod1. Preheat an electric griller.2. Combine oil, crushed peppercorns, salt, chilli flakes, torn thyme sprigs and garlic in a bowl and mix. Add yellow zucchini, green tomato, red tomato, separated onions, green zucchini and brinjal and mix well.3. Grease the preheated griller with some oil, place the marinated vegetables and grill till golden from both sides. Transfer on a plate.4. Take mayonnaise in another bowl. Add sriracha sauce and mix well.5. Spread some mayonnaise-sriracha mixture on 4 toasted bread slices. Put some iceberg lettuce and grilled vegetables on top and cover with remaining bread slices.6.
