Handvo is a vegetable cake originating from the Gujarat, India.

It is a part of the Gujarati cuisine. It is often made with a bottle gourd filling, though many other vegetables can be added. Sometimes crushed peanuts are also added.
Handvo, a delicious savory cake made from rice, lentils and vegetables like bootle gourd, carrot, green peas, etc., is a traditional Gujarati snack enjoyed with Green Chutney. Batter is prepared by grinding soaked rice and lentils with curd and then prepared mixture is left to ferment for 8-10 hours.

Mixed vegetables like bottle gourd (lauki), carrot and green peas are then added to the fermented batter and round shaped thick savory cake is cooked from the batter by cooking it with one of three different methods; 1) using a pan, 2) baking in special handvo cooker on gas stove, or 3) baking in oven.

Ingredients :
- Carrot
- Bottle gourd
- Onion
- Green peas
- Tomato
- Ginger, garlic, green chili paste
- Baking soda
- Pickle paste
- Red Chili
- Turmeric powder
- Salt
- Crushed Peanuts
- Handvo batter
- Mustard seed
- Sesame seeds
- Oil

Preparation :
- Take Handva batter into bowl
- Add all ingredients into bowl
- Mix well all ingredients
- Turn on flame and hit oil and spread oil on sides
- While oil heat , add baking soda into bowl an mix well
- Add Mustard seed and sesame seeds
- Add mixed batter into hot oil
- Cover pan with lid and cook on low flame.
- Cook while golden brown in color
- Turn over and cook another side till golden brown in color
- Remove and serve handvo with chutney.
