Gulkand Lassi | Sanjeev Kapoor Khazana

Refreshing chilled lassi with the flavour of gulkand and fresh rose petals.

GULKAND LASSI

Ingredients

1 tablespoon candied rose petals (gulkand)
2 cups yogurt
1 cup powdered sugar
2 tablespoons rabri
½ teaspoon green cardamom powder
1 teaspoon rose essence
4-5 almonds, blanched and peeled for garnishing
2-3 fresh rose petals for garnishing

Method

1. Blend together yogurt, powdered sugar, rabri, cardamom powder, candied rose petals and rose essence with 3-4 ice cubes to a thick mixture.
2. Cut almonds to juliennes.
3. Pour lassi into individual glasses and serve chilled garnished with almond juliennes and rose petals.
