Perfect tried and tested storage method along with instructions to air fry. #HappyCookingToYou #FoodFusion #Ramadan #Samosa #alooWritten Recipe: https://bit.ly/3IhPtJOHara Bhara Chutney SamosaRecipe in English:Ingredients:Prepare Hari Bhari Chutney:-Podina (Mint leaves) Cup-Hara dhania (Fresh coriander) Cup-Sev nimco 2 tbs-Lehsan (Garlic) cloves 5-6-Adrak (Ginger) 1 inch piece-Hari mirch (Green chillies) 6-7-Lemon juice 3-4 tbs-Water 3-4 tbsPrepare Samosa Dough:-Maida (All-purpose flour) sifted 2 & Cups-Ajwain (Carom seeds) tsp-Namak (Salt) 1 tsp-Ghee (Clarified butter) 2 tbs-Prepared Hari chutney 2 tbs-Warm water 1 Cup or as required-Cooking oil 1 tspPrepare Hari Bhari Chicken Filling:-Cooking oil 2 tbs-Zeera (Cumin seeds) 1 tbs-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs-Pyaz (Onion) chopped 1 medium-Chicken qeema (Mince) 300g-Haldi powder (Turmeric powder) tsp-Lal mirch powder (Red chilli powder) 1 tsp or to taste -Namak (Salt) tbs or to taste-Palak (Spinach) chopped,blanched & squeezed Cup-Aloo (Potatoes) boiled & grated 2 medium-Cooking oil for frying Directions:Prepare Hari Bhari Chutney:-In a blender jug,add mint leaves,fresh coriander,sev nimco,garlic,ginger,green chillies,lemon juice, water,blend well & set aside.Prepare Samosa Dough:-In a bowl,add all-purpose flour,carom seeds,salt & mix well.-Add clarified butter and mix well until it crumbles.-Add 2 tbs of prepared hari bhari chutney (reserve for later use),gradually add warm water& knead until dough is formed. -Grease with cooking oil,cover & let it rest for 15-20 minutes.Prepare Hari Bhari Chicken Filling:-In a wok,add cooking oil,cumin seeds,coriander seeds & mix well.-Add reserved green chutney,mix well & cook on low flame for a minute.-Add onion,mix well and cook for a minute.-Add chicken mince,mix well until it changes color & cook on medium flame until it dries up (6-8 minutes).-Add turmeric powder,red chilli powder,salt,mix well & cook for 1-2 minutes.-Add spinach,potatoes,mix well & cook on low flame for 2-3 minutes.-Let it cool.-Take a small dough,make a ball,sprinkle dry flour & roll out with the help of rolling pin.-With the help of a bowl,cut into a round shape dough (6-inch diameter) then cut into two pieces. -On one side of dough,apply water,join two sides/edges to make a cone and press gently to seal the cone. -Fill the cone with prepared filling (1 tbs),apply water on the edges and bring the edges together and seal the edges properly. -Prepare the remaining samosas similarly (makes 24-25). -On a tray,place samosas and freeze overnight or until firm then take out and can be stored in an airtight container for up to 1 month in freezer.-In a wok,heat cooking oil and fry samosas on medium flame until golden.Recipe in Urdu:Directions:Prepare Hari Bhari Chutney:-Blender jug mein podina,hara dhania,sev nimco,lehsan,adrak,hari mirchein,lemon juice aur pani dal ker ache tarhan blend ker lein & side per rakh dein.Prepare Samosa Dough:-Bowl mein maida,ajwain aur namak dal ker ache tarhan mix karein.-Ghee dal dein aur crumble hunay tak ache tarhan mix ker lein.-2 tbs tayyar hari bhari chutney dal dein (reserve for later use) aur thora thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein.-Cooking oil sa grease ker lein aur dhak ker 15-20 minutes kliya rakh dein.Prepare Hari Bhari Chicken Filling:-Karahi mein cooking oil,zeera aur sabut dhania dal ker ache tarhan mix ker lein.-Reserved hari chutney dal ker ache tarhan mix karein aur halki ancch per ek minute kliya paka lein.-Pyaz dal ker ache tarhan mix karein aur ek minute kliya pakayein.-Chicken qeema dal dein aur rag tabdeel hunay tak ache tarhan mix ker lein aur darmiyani ancch per sukh janay tak paka lein (6-8 minutes).-Haldi powder,lal mirch powder aur namak dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.-Palak aur aloo dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.-Thanda ker lein.-Chota dough la ker ball bana lein aur maida chirak ker rolling pin ki madad sa bail lein.-Bowl ki madad sa round shape mein cut ker lein (6-inch diameter) phir two pieces mein cut ker lein.-Dough ki ek side per pani laga lein,do sides/edges ko join ker ka cone bana lein aur halka sa press ker ka cone ko seal ker lein. -Cone mein tayyar filling (1 tbs) bhar dein,edges per pani laga ker edges ko ek saath ache tarhan seal ker lein.-Baqi samosay bhi is he tayyar ker lein (makes 24-25). -Tray per samosay rakh dein aur overnight or firm hunay tak freeze ker lein phir bahir nikal lein aur airtight box mein rakh ker 1 month kliya freezer mein store ker saktay han. -Karhai mein cooking oil garam karein aur darmiyani ancch per golden ho janay tak fry ker lein.
